I'm switching from Intel to AMD and I decided on ASUS TUF Gaming X570-Pro to go with my Ryzen 5800X and I need to do something I've never done before, update the bios and I have a few questions
1 - will this mobo work out of the box with my 5800X?
2 - if no to question 1 when I update the bios should I have the CPU in the board?

Maybe. You'd like to think that the 5000 series chips have been out long enough boards would be shipping with BIOS updated but there is no guarantee.

TUF X570-Pro has BIOS flashback without CPU I believe. (Without it, having the 5800x in the socket wouldn't help, you would need a CPU that was compatible with the version of the BIOS already installed.)

OK so when I do BIOS flashback it is recommended to not have the CPU in socket

1. I don't thing there are a guarantee that a particular Motherboard can support 5000 Series out of the box. So getting a Motherboard with Bios flashback is a life changer
2. Your motherboard has a build in Bios flashback on it, There on the rear io. Bios flashback is a feature that allow you to update the Motherboard BIOS without a CPU/RAM/GPU on it. Just make sure you got clean 24 pin PSU power...
Maybe try to installing the CPU first, Then if it won't boot. Try to update the Bios using the Bios Flashback
Hmm, when I run NVFlash64, I get ERROR: No NVIDIA display device adapters found. And when I try exporting my vBIOS in GPU-Z I get "BIOS reading not supported on this device".
