Are the two interchangeable? I want to make lasagna, but just realized I'm out of Ricotta cheese, but I have farmer cheese. Anyone ever try this? Please don't recommend I use cottage cheese, I'm out of that , too, and my DD will not touch it, and she'll know the difference.

Hmm...thanks for the replies. I didn't think the two tasted so different. The consistency IS a lot firmer though than ricotta . I guess we'll wait and see.

Which country would that be mummy-bh? Anyways, I had a small amount of ricotta cheese left, so I used basically half ricotta and half farmer cheese. It didn't taste any different , but the whole lasagna felt a bit firmer, so I think had I used all farmer cheese, it would've been too firm. None of the kids complained, though!
